Soft, creamy, full of color and sweet taste, this oat & beet porridge is a real treat for the whole family, especially for babies and small children!
You will need:
½ cup rolled oats
2 cups water or plant milk
1 beet, peeled
Pinch of salt
1 tablespoon roasted sesame seeds or gomashio
Soak oats in water or milk overnight. Finely grate the beet and squeeze out the juice with the help of a cheese cloth, or use a juicer. Alternatively, you can slow cook the beet in a small amount of water until soft, blend it and add it to the porridge. However, the pink color won’t be as bright, and the taste will be milder.
Place soaked oats with the soaking liquid in a small saucepan, and stir constantly over low heat until it boils. Add a pinch of salt. If you prefer a much softer porridge, add a little more hot water. Remove from heat and add the beet juice. Serve immediately, while still hot and creamy. Sprinkle with roasted sesame seeds, gomashio or any other nuts or seeds of your choice. Enjoy!
